Southern Style Gravy
5 Tbsp butter
4 Tbsp flour
Approximately 2 cups milk
salt
pepper
spices (optional)
Melt butter over low heat in a small saucepan. Add flour and combine. Add 1/4 tsp salt and around 10 grinds of pepper.
Stir until the flour is lightly browned and then add 1/2 of the milk and increase to medium heat.
Allow to come to a simmer, stirring constantly to avoid sticking. Be ready to add milk as it may thicken very quickly.
Add the rest of the milk and simmer until the gravy has thickened considerably. Continue to stir constantly, preferably with a whisk.
You will know it is ready when the gravy leaves “tracks” if you draw the whisk or spoon through the gravy.
Add pepper, salt and/or cayenne pepper or ground chill to taste.
Serve with biscuits.
